Quick Quiche

Eggs are so versatile and delicious   They can be served for breakfast, lunch, or dinner not to mention a million ways.  When serving breakfast to a crowd, Quiche is a good way to go.  Although I don’t always care for all that crust, or the time crust takes.  So I found a recipe for quick Quiche and adapted it to how I like it.

Quick Ham and Asparagus Quiche

Quick Quiche:

This prepares a 9 x 13 inch glass baking dish

  • 1 lb. of bacon, cooked and crumbled or 1/2 lb. of ham, diced
  • 8 oz. shredded Swiss cheese (I used gouda once)
  • 4 Tbs butter, melted
  • 1/2 cup onion, finely chopped
  • 1 1/2 tsp salt
  • 3/4 cup flour
  • 3 cups milk
  • 8 eggs, beaten
  • Whatever strikes your fancy for vegetables if you want them (steamed asparagus, chopped or sweet peppers, diced and lightly sautéed is what I had on hand)

Preheat oven to 350 degrees.

Lightly grease a 9 x 13 glass baking dish.

Line the bottom with meat and cheese.

Combine remaining ingredients until smooth.  Pour over meat and cheese.

Bake for 40-45 min, or until set.

Allow to cool at least 10 min. before serving.  I serve it with my favorite salsa.
