These bar cookies are yet another recipe passed down from my grandma. Don’t grandmas make the best food. These remind me of an oatmeal cookie or a spiced cake bar. It makes plenty to share. Luckily I live within a mile of my parents, in-laws, grandparents, and have some amazing neighbors so I am never without someone to share with.
- 1 cup raisins
- 2 cups water
- 1/2 cup butter
- 1 cup sugar
- 2 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
Boil raisins and water for 10 minutes, the liquid will reduce and that is fine.
While cooking combine flour, baking soda, salt, cinnamon and nutmeg in a bowl and set aside.
Add butter and sugar to the raisins and stir until mixed well.
Next add raisin mix into dry ingredients and stir until combined.
Grease a 10 x 15 inch jelly roll pan, and pour batter evenly in pan.
Bake in a preheated oven at 350 degrees for 15-20 minutes, until slightly golden and toothpick comes out clean.
Immediately drizzle and brush with the following glaze and allow to cool. Cut into squares and enjoy!
