Sweet Potato Hash with leftover Pork

Sweet potatoes are just so delicious and so versatile   My kids love them and Mr.Picky, well I have yet to convince him.  I had almost a whole thick pork chop leftover from dinner the night before.  The pork chop had been grilled, with a somewhat sweet sauce on top of it.  What a better way to use up leftover meat than to chop it up or grind it into hash.

Sweet Potato Hash:

This will yield to healthy portions for two adults and a few small ones for children.

  • 1 large sweet potato, diced
  • 1/2 onion, diced
  • 1/2 sweet pepper or 2-4 small sweet peppers, thinly sliced
  • Leftover or cooked pork chop or pork loin n, chopped
  • Salt, Pepper, and Thyme to taste

Sweet Potato Hash

In a skillet over medium high heat, add 2 Tbs coconut oil or olive oil.

Add sweet potatoes, and saute until almost tender.  Add onion and sweet peppers.

Sweet Potato Hash

Continues to fry until onions are almost translucent, then add your pork.

Season with salt, pepper, thyme, or sometimes I use rosemary to taste.

*I served my hash with a poached egg on top, but a fried egg is just as good.
