Gobble-Up Strata

Flipping through some cooking magazines at grandma’s house this recipe for gobble-up strata struck my attention.  It is an article on ways to use up leftovers after Thanksgiving.  Well it is no are we close to Thanksgiving and my Grandma and me wants to know who has leftover stuffing or dressing?  It is always the first thing to disappear at our meal and we usually make double dishes.

I figures I could make this whenever and it sounded pretty good.  Mr.Picky is not a huge fan of strata but I served it when company was around so I knew he would eat it no matter what.  Knowing that I would never have leftover stuffing I prepared some with the purpose of this recipe alone.  I also used some rotisserie chicken that I had pulled apart and frozen previously.  The peppers and onions give it great color, it reminds me of Christmas.

The strata turned out great and was very filling.  Mr.Picky said it would be even better with a bit of turkey gravy over the top, I must agree that it would make it even better.

Gobble Up StrataGobble-Up Strata:

  • 3-4 cups leftover stuffing or dressing
  • 2 cups cubed and cooked chicken or turkey
  • 4 green onions,chopped
  • 1/2 red bell pepper, finely chopped
  • 6 eggs
  • 1 1/2 cup milk
  • 1/4 cup mayonnaise

 

Lightly grease a 9×13″ baking dish.

Layer stuffing, then chicken, followed by the green onions and peppers.

Whisk together the eggs, milk, and mayonnaise and pour evenly over the top of the casserole.

Bake at 350 degrees uncovered for 60-65 minutes.  Allow to cool about 10 minutes before serving.

Spanish Rice

I don’t remember even eating Spanish Rice as a child.  Mr.Picky loves spanish and mexican rice out of a box but I refuse to make the sodium filled rice.  I have come up with a recipe similar to the Mexican rice but had no recipe for the Spanish rice until now.

After doing some research and came up with this recipe after combining what sounded good to me.  It turned out great.  In fact is was the base layer to a skillet/casserole recipe I was making.  Be sure to check back for that recipe.

This Spanish rice is not spicy due to the little ones.  Extra heat could be added with come cayenne pepper to the mix or maybe add a diced jalapeño.  It was flavorful without too much salt and the perfect heat for the kids.

Spanish RiceSpanish Rice:

  • 1 cup water
  • 1 (15 oz) can petite diced tomatoes with juice
  • 1/2 green pepper, chopped
  • 1/2 large onion, chopped
  • 1 1/2 cup uncooked long grain white rice
  • 1/4 tsp granulated garlic
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1 Tbs olive oil
  • 1 tsp or 1 cube chicken bullion
  • 1 tsp salt
  • 1 tsp cumin

In a skillet heat olive oil over medium/ high heat.

Saute onion, pepper, and rice.  Stirring constantly so the rice does not burn, cook until most of the rice has toasted and the vegetables soften.

Spanish Rice

Add the rice mixture to a medium pot along with the remaining ingredients.

Bring the mixture up to a boil, cover and reduce heat to the lowest it will go.

Cook covered for about 15 minutes or until rice is tender.  Fluff with a fork when done.

Curried Pork

Some of my favorite cookbooks are Cooking Light Annual Recipes, this recipe struck my eye out of the 2004 edition.  As a child my mother cooked a lot with curry and to be honest it burned me out on it.  Mr.Picky likes it so I thought I should give it a try and cook a curry dish.

This dish was great and easy.  Allow yourself at least an hour to cook though.  The only thing I would do differently is add some more spice for a fuller flavor.  I have adjusted the recipe to what I would do next time.  We served our curried pork over white rice with seasoned roasted cauliflower.

Curried PorkCurried Pork:

  • 1 1/2 cup onion, finely chopped
  • 1 cup green pepper, chopped
  • 1 1/2 cup sliced mushrooms
  • 1/4 cup flour
  • 2 tsp curry powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 1/2 lb. boneless pork loin, cut into 1/2″ cubes
  • 1 (14.5 oz.) can no salt added diced tomatoes, undrained

Preheat oven to 350 degrees.

In a large nonstick skillet lightly sprayed with cooking spray or olive oil saute onions and peppers over medium heat for about 3 minutes.

Add in mushrooms and cook another 2 minutes.

Place vegetables in a 11 x 7″ baking dish that has been lightly greased.

Combine flour, curry powder,salt, and pepper in a bowl.  Add pork and toss to coat.

In the same pan you used for vegetables, spray again with oil.  Over medium high heat add pork mixture and cook about 5 minutes until pork has browned on each side.

Pour pork mixture over vegetables in baking dish.  Now pour the can of tomatoes over the whole dish.

Cover and bake at 350 degrees for 1 hour or until tender.

Serve over rice.

Sweet and Sour Meatballs

Earlier that day I had been near the store when Mr.Picky messaged me to pick up a can of pineapple chucks.  I did as he asked but was confused because Mr.Picky does not like canned pineapple and I was curious to know what he was making.  I was headed to play my monthly game of Bunco.    Mr.Picky offered to prepare dinner for him and the kids.  I don’t usually leave until after dinner and I usually wait to eat until I get to Bunco.

He went on the faithful Allrecipes and found Waikiki Meatballs Recipe.  I was shocked and so was he that he was making sweet and sour meatballs.  He does not like hot pineapple or sweet and sour sauce.  Like a good dad he figured the kids would love it.  Well it turned out great and both Mr.Picky and the kids enjoyed it.  He was so proud of his homemade meatballs.  I ended up eating two dinners that night because of course I needed to sample Mr.Picky’s cooking.  This will continue into the dinner rotation of recipes.

We slightly altered the recipe because the bell peppers needed to be cooked just a bit more.  I would add a bit more vinegar as it was a bit sweet for me.  But it was still great and could be left as is.

Sweet and Sour Meatballs:

  • Sweet and Sour Meatballs1 1/2 pound lean ground beef
  • 2/3 cup saltine cracker crumbs
  • 1/3 cup minced onion
  • 1/4 cup milk
  • 1 egg
  • 1 1/2 tsp ground ginger
  • 1/2 tsp salt
  • 1 Tbs olive oil
  • 2 Tbs corn starch
  • 1/2 cup packed brown sugar
  • 1 (15 oz.) can pineapple chunks, juice drained and reserved
  • 1/2 cup white vinegar
  • 1 Tbs soy sauce or amino acids
  • 1/3 cup green bell pepper, chopped (we chopped it large so the kids could pick it out)

In a bowl combine beef, crackers, onion, milk, egg, ginger, and salt mix until evenly incorporated.

Scoop meat into even size balls 1-2 Tbs of meat per ball.

Heat olive oil in a medium heat skillet and brown meatballs until cooked through.  Add the green peppers into cook the last few minutes of cooking on the meatballs.

Drain any fat if there is any.

In a small bowl combine cornstarch, sugar, pineapple juice, vinegar, and soy sauce until smooth.

Pour the sauce over the meatballs and continue to cook and stir about 5 minutes until sauce has thickened.

Add the pineapple chunks and continue to heat through.

Serve over white or brown rice.

One Dish Italian Chicken and Sides

After a friend shared the recipe Green Beans, Chicken & Potatoes – Julie’s Eats & Treats, she raved on and on about how easy and great it was.  I immediately made it and let me tell  you she was right.  I don’t think dinner can get easier or more family friendly than this recipe.

This meal was a one dish Italian flavored chicken and sides dish.  No need for anything else besides maybe some dinner rolls if you have them around.  Moist flavorful chicken, tender potatoes, and perfectly cooked green beans.  Both kids loved this meal and ate seconds and leftovers the next day.  Not to mention my 5-year-old decided she did like green beans.

The only thing I would do differently and I will keep you all posted is to create my own Italian seasoning mix.  I am not a fan of packaged seasoning mixture because they are usually full of salt and junk.  Ranch dressing I have down but I don’t normally cook a lot with Italian seasoning so I will have to experiment.  If you try this with a homemade seasoning mix before I update let me know.

Italian Chicken and SidesOne Dish Italian Chicken and Sides:

  • 2-3 cups fresh green beans, trimmed and cut
  • 2-3 chicken breasts, cubed
  • 3-5 medium/large red or new potatoes, cubed
  • 1/4 cup butter, cut in small cubes or slices
  • 1 package of Italian seasoning/dressing mix

Preheat oven to 350 degrees.

In a 9×13″ pan line up green beans on one side lengthwise and potatoes on the other.

Place the chicken in the center row.

Arrange the butter cubes evenly over everything and then sprinkle all with the Italian seasoning.

Tightly cover with foil and bake at 350 degrees for 60 minutes.

Carefully remove foil (it is so so hot) and serve.

Giant Birthday Burger

Mr.Picky requested only one thing for his birthday. . . .a giant birthday burger.  This was exciting and intimidating all at the same time. I asked if he wanted to invite anyone for his birthday dinner he was worried I wouldn’t make it large enough. Needless to say when it was all said and done we managed to eat under half. My picky guy who never eats leftovers at that burger for the next few days and loved it.

I started out by trying a new hamburger bun recipe out.  Only instead of making small buns, I used the whole recipe to create a large bun.  I used a large dinner plate as my template and let the burger expand from there.

This recipe for hamburger buns will now be the only bun recipe ever eaten in our home.  It was easy and the best bun we have ever eaten.  Not only did it hold together but it was not too fluffy and bready nor was it crumbly or dry.  The perfect bun.  I will post the recipe within a few days!  Did I mention I think it would make great dinner rolls and only takes about an hour to make, with rise time.

While my bun was cooling on a wire rack I started preparing my burger patty.  I used 1 1/2 pound of ground beef.  I added a dash of Worcestershire sauce and an envelope of french onion seasoning because this is how Mr.Picky loves his burgers.  I again used the same oversized dinner plate to flatten and shape my patty.

I baked 1 pound of bacon until crisp and sliced up all the fixings.

I baked the patty in the oven at 400 degrees for about 15 minutes or until desired pinkness.  Flip the burger 3/4 of the way through cooking and add sliced cheese to melt in the last-minute.

Once the burger was out of the oven I used a large skillet to make 5 eggs over-easy to add to the burger.

I sliced the bun in half and started building my burger on a cutting board.  At first I wasn’t sure what to put this monster burger on and then it was only obvious since I would be slicing it to eat anyway.  I spread mayonnaise on the bottom bun, then iceberg lettuce (one of the few things it tastes good with), tomatoes, salt and pepper, and bacon.  Although you do not see bacon covering the whole thing it is ok, you slice the burger like a pizza so there is plenty.

Place your cooked patty with or without cheese on top of the bacon followed by the eggs.  To finish the top bun I added some ketchup and placed it on top.

I served our giant burger with fries and some fry sauce.  We went all out for the birthday boy.  Of course you can add whatever condiments or toppings you would like.  Now go get a slice of that birthday burger!

Taco Crescent Ring

Taco RingThere is a huge brand out there that came out with this Taco Crescent Ring at least 15 years ago.  Well I am still making it but I have my version.  It is easy and looks fancy plus both Mr.Picky and the kids eat it up with smiles on their faces.  It is not by any means healthy or by scratch.

I happen to have bought a box of 5 cans of crescent rolls as a treat to create what I felt necessary.  This is not a usual purchase and I know they are loaded with all kinds of junk.  Sometimes my stomach feels the need to eat some junk and doesn’t care what my brain or body want.

I was in need of a quick dinner and had everything on hand.  So this recipe was prepared once again to everyone’s satisfaction.  I thawed the meat from the freezer and the rest of the ingredients are usually on hand.

Taco RingTaco Crescent Ring:

  • 2 tubes of crescent rolls
  • 1 lb. ground beef or turkey
  • 1/2 cup onion, chopped
  • 1 (16 oz.) can of refried beans (black or pinto)
  • 1 recipe of my taco seasoning or a taco seasoning packet
  • 2 cups cheddar cheese or mexican cheese blend
  • 1/2 cup water
  • tomatoes, diced
  • sour cream
  • lettuce, shredded
  • salsa
  • olives,sliced

Brown ground beef and onion in a skillet and drain any extra fat.

Add in water, taco seasoning, and refried beans.  Stir and heat until combined.  Set aside to cool slightly.

On a circular baking pan or baking stone spread the crescent rolls evenly in a sun shape.  Leave a circle about 6 inches wide in the center and have the pointed end face out, overlap here needed.

I will sometimes roll or press the rolls together to get a good base for the filling if needed.

Spread the meat mixture around the circle evenly allowing about 1/2″ of room near the edge of the inner circle.

Starting anywhere began folding the pointed edge of the outside triangle into the center.  Slight press or tuck under the inner circle to hold the filling together.  Not all of the filling will be covered and that is the pretty part.

Bake in a preheated oven at 375 degrees for about 20-25 minutes or until golden brown.

 

Serve with tomatoes, sour cream, lettuce, salsa, and olives to top each slice.
