Cheeseburger Meatloaf

Came across this recipe from Recipes Straight from the Kowboys Home: “Big Mac” Meatloaf.  Big Mac meatloaf sounded right up Mr.Picky’s alley.  The recipe turned out nice and moist, not sure about tasting like a big mac.  It definitely tasted like a cheeseburger.  Cheeseburger meatloaf is not your average meatloaf and was a great change.

The technique was really interesting and I am going to run wild with it.  I can’t wait to stuff all kinds of fillings into meatloaf.  I would serve this as cheeseburgers to company by just slicing and serving on buns.

  • 2 lbs. lean ground beef
  • 2 eggs
  • 1 cup thousand island dressing
  • 2/3 cup cracker or bread crumbs
  • 1/4 cup sweet relish
  • 1/2 cup finely chopped onion
  • salt and pepper
  • 1 cup shredded cheddar cheese

Combine all but the cheese and mix well until evenly combined.

Divide the meat mixture in half.  Spread each half flat in to a rectangle on a piece of wax paper.

Sprinkle the cheese even between the two flat rectangles.

Roll each sheet of meat as if making cinnamon rolls, from the long end to long end.

Place the rolls side by side in a 9 x 13″ baking dish.

Bake 350 degrees for 30 minutes, remove from oven and top with a bit of ketchup and some more cheese if desired.

Continue to bake another 15 minutes or so.

Taco Crescent Ring

Taco RingThere is a huge brand out there that came out with this Taco Crescent Ring at least 15 years ago.  Well I am still making it but I have my version.  It is easy and looks fancy plus both Mr.Picky and the kids eat it up with smiles on their faces.  It is not by any means healthy or by scratch.

I happen to have bought a box of 5 cans of crescent rolls as a treat to create what I felt necessary.  This is not a usual purchase and I know they are loaded with all kinds of junk.  Sometimes my stomach feels the need to eat some junk and doesn’t care what my brain or body want.

I was in need of a quick dinner and had everything on hand.  So this recipe was prepared once again to everyone’s satisfaction.  I thawed the meat from the freezer and the rest of the ingredients are usually on hand.

  • 2 tubes of crescent rolls
  • 1 lb. ground beef or turkey
  • 1/2 cup onion, chopped
  • 1 (16 oz.) can of refried beans (black or pinto)
  • 1 recipe of my taco seasoning or a taco seasoning packet
  • 2 cups cheddar cheese or mexican cheese blend
  • 1/2 cup water
  • tomatoes, diced
  • sour cream
  • lettuce, shredded
  • salsa
  • olives,sliced

Brown ground beef and onion in a skillet and drain any extra fat.

Add in water, taco seasoning, and refried beans.  Stir and heat until combined.  Set aside to cool slightly.

On a circular baking pan or baking stone spread the crescent rolls evenly in a sun shape.  Leave a circle about 6 inches wide in the center and have the pointed end face out, overlap here needed.

I will sometimes roll or press the rolls together to get a good base for the filling if needed.

Spread the meat mixture around the circle evenly allowing about 1/2″ of room near the edge of the inner circle.

Starting anywhere began folding the pointed edge of the outside triangle into the center.  Slight press or tuck under the inner circle to hold the filling together.  Not all of the filling will be covered and that is the pretty part.

Bake in a preheated oven at 375 degrees for about 20-25 minutes or until golden brown.

 

Serve with tomatoes, sour cream, lettuce, salsa, and olives to top each slice.

Wild Rice and Mushroom Soup

Mr.Picky came home excited years ago about Wild Rice and Mushroom Soup he had tried at a close family friends.  I was absolutely shocked because Mr.Picky dislikes soup so much.  He carried in the recipe copied for us and asked me to make it.  We had no mushrooms at the time and I kind of forgot about it the recipe in the box.

With the seasons turning it is now time to go pick wild mushrooms.  Most people find this to be scary because they are worried they will be poisoned.  I trust Mr.Picky and his mushroom skills.  He came home with 3 gallons of chanterelle mushrooms and a few huge lobster mushrooms.

Funny thing is I am in no way picky mushrooms is one of two foods I do not care for.  Most of the time I do not want to inflict my tastes on the kids so I suck it up and eat them.  We dried what we didn’t eat fresh the first day or in the soup, so now we can enjoy them throughout the rest of the year.

Back to the soup.  Once I sat down and read the recipe I realized why Mr.Picky liked it. Bacon, burger, and mushrooms are some of his favorite foods.  I made the recipe according to the directions as it was my first time.  I will probably take out the mushroom soup and make it by scratch next time.  Although this was really good and with a thick and creamy texture.  I also didn’t have just wild rice but I used a wild rice and quinoa mixture that worked well.

Wild Rice and Mushroom Soup:

Wild Rice and Mushroom Soup

 

  • 1/2 lbs. bacon (browned drained and chopped)
  • 1/2 lb lean ground beef, browned drained and crumbled
  • 1/2 cup wild rice (can use brown)
  • 2 cups water
  • 1 cup chopped onion
  • 2 stalks celery,chopped
  • 2/3 cup green pepper, chopped
  • 2 cans beef broth
  • 1 cup dried mushrooms or fresh, chopped
  • 3 (10 3/4 oz.) cans cream of mushroom soup
  • Dash of Worcestershire sauce
  • salt and pepper

Rinse rice in cold water until clear. Boil rice in 2 cups of water and simmer 15 min.

Saute veggies until onions are clear.

In 4 quart pan put cans of broth and cream of mushroom soup mix and heat until combined. Add remaining ingredients and season to taste with Worcestershire sauce and salt and pepper.

Simmer 1 hour, serve hot with some great crusty bread to dip.

Tiajuana Tacos

Tiajuana Tacos

This is a dish that will feed a crowd, and people love it.  It is easy made in the crock pot and most people love a good taco.    I serve both hard shells and soft tortillas, alongside my numerous toppings.  This recipe came out of my favorite slow cooker recipe book Fix-It and Forget-It Big Cookbook by Phyllis Pellman Good. *The recipe was spelled this way, I know I am not the best speller but this was not my error.

Tiajuana Tacos:

  • 3 cups cooked chopped beef  (about 1 pound)
  • 1 lb. can refried beans
  • ½ cup chopped onion
  • ½ cup chopped green peppers
  • ½ cup chopped ripe olives
  • 8 oz. can tomato sauce
  • 1 Tbs chili powder
  • 1 Tbs Worcestershire sauce
  • ½ tsp garlic powder
  • ¼ tsp pepper
  • ¼ tsp paprika
  • ⅛ tsp celery salt
  • ⅛ tsp ground nutmeg
  • ¾ cup water
  • 1 teasp salt
  • 1 cup crushed tortilla chips
  • shredded lettuce
  • chopped tomatoes
  • shredded cheese

Combine first 15 ingredients in slow cooker.Tiajuana Tacos

Cover, and cook on high 2 hours.

Just before serving, fold in corn chips.

Spoon mixture into taco shells. Top with lettuce, tomatoes, and cheese.  With any leftover you can make a great taco salad.

Variations:

*I make this often with ground turkey, we are not big beef fans.  Not only do most people not notice, but it is much healthier.
