Whole Grain Waffles

Whole Grain WafflesI have never been a huge fan of waffles.  They have always seemed somewhat dry and in need of many toppings to make them taste better.  After being given a belgium waffle maker, I decided to set out to find a recipe I liked.  I found a recipe on Allrecipes.com and have made my own adjustments.  A lot of fiber is added to this recipe increasing the nutrient compared to the average waffle.  The flavor just doesn’t compare to regular waffles.  I don’t know if they will taste different in a regular waffle maker but I wouldn’t think so.

We are only a family of four, with two little eaters this recipe feeds us all with plenty to spare.  This recipe freezes great, and when you are ready to reheat just pop them in the toaster.  You could even make up a batch when you have free time and freeze them for a quick breakfast during the week.  We serve them with maple syrup, peanut butter, and have even found a recipe for buttermilk syrup which I will be posting.

Whole Grain Waffles:

  • 2 eggs, beaten
  • 1 3/4 cup milk (skim works fine)
  • 1/2 cup applesauce (or 1/4 cup oil and 1/4 cup applesauce)
  • 1 tsp vanilla
  • 1 cup Whole Wheat Flour
  • 1/2 cup flaxseed meal
  • 1/4 cup wheat germ
  • 1/4 cup all-purpose flour
  • 4 tsp baking powder
  • 1 Tbs sugar
  • 1/4 tsp salt

Mix eggs, milk, applesauce, and vanilla in a large bowl.

In a separate bowl combine remaining dry ingredients and whisk, or sift together.

Add dry mixture into egg mixture and stir until smooth but do not over mix.

Whole Grain WafflesPour into a hot waffle iron and cook until golden brown.  Enjoy with the topping of your choice or eat them plain, I know my kids love the leftovers cold.
